Chili is my go-to! Super cheap with mostly beans and tomatoes, but so filling and tasty if you season it right.

Or try a vegetable curry over rice. It’s cheap, easy to meal prep, and super filling. Grab a jar of curry paste and some coconut milk—it’s great with lentils too.

I make a similar curry, but I add chickpeas and top with a little yogurt. So good and affordable!

Learning to make homemade flour tortillas has changed taco night for me. Even just bean and cheese or potato and egg taste like restaurant quality!

As someone who makes these a lot, getting a tortilla press has been a huge time saver. A cast iron one is fairly affordable and lasts forever. Rolling them by hand is nice but takes a lot longer.

My tips: I like using Crisco, but any oil works fine. Just make sure to let the dough rest for at least 30 minutes before rolling—it makes it so much easier. And yes to the cast iron press!

My recipe is simple:

  • 2 cups flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp baking powder
  • 1/4 cup lard
  • 3/4 cup water.

Mix, knead, and divide into balls. Roll out each ball, cook on a skillet, and enjoy! They store well for the next day too.

I actually tried a similar recipe, but I used olive oil instead of lard, and it was just as good!

Growing my own herbs has been a game-changer. Fresh basil, dill, and parsley take any meal up a notch! I also stock up on spices, especially curry powder and Ethiopian spice mixes. They make simple chicken or veggie dishes taste like something from a restaurant.
